Ingredients For Urad Dal Cutlet

  • Urad dal - 1/2 cup (100 grams)
  • Potato-5 (300 g)
  • Carrot -1/2 cup
  • Cabbage - 1/2 cup
  • Capsicum -1/2 cup
  • All purpose flour -1/2 cup
  • Green coriander -3 tbsp
  • Black pepper powder -1/2 tsp
  • Green chili - 2 -3
  • Ginger - 1 inch
  • Red chili - 1/2 tsp
  • Coriander Powder - 1 tsp
  • Cumin powder -1/2 tsp
  • Amchur powder -1/2 tsp
  • Garam Masala -1/2 tsp
  • salt - to taste
  • Bread Crumbs - as required
  • oil - for frying
  • Cooking time - 1 hour
  • Serves - 4

Cooking Method For Urad Dal Cutlet

To prepare Urad Dal Veg Cutlets or Kabab Recipe, first of all, soak the lentils in water for an hour. And after an hour, when the lentils become well swelled, put the lentils in a mixer grinder and make a fine paste.
Boil the potatoes and mash them well, there should be no lumps in the potatoes, now grate the carrots, cabbage, capsicum. Then put lentil paste, mashed potatoes and all the grated vegetables in a bowl.
Along with it, we will simultaneously add all the spices like green coriander, green chili, black pepper, cumin powder, coriander powder, ginger, mango powder, red powder and garam masala, salt and mix all the ingredients well.
Now add flour in a bowl and slowly add water to make a smooth batter. The solution should neither be too thick nor too thin and there should be no lumps in the solution. Now add half tsp black pepper and half tsp salt to this solution and mix it well.
Now take bread crumbs in a plate, then take some mixture of lentil-vegetable mixture on hand and make it in desired shape or cut it with cutlet cutter. And dip it in flour solution. 
After dipping in the solution, we will put the cutlets in a bowl containing breadcrumbs and roll it gently so that it gets stuck.
And with this, put a pan on the gas and heat it on high flame and add oil to it. Heat the oil and put the cutlets one by one in the oil and fry them for 2 to 4 minutes. Fry the cutlets till they turn golden brown from both the sides.
We will thus fry all the cutlets and serve it hot with sweet or spicy chutney of choice.
