Tandoori masala (Tandoori Spices) is readily available in market as readymade. But homemade tandoori masala is very aromatic and adds value to the recipes. And most importantly it could easily be prepared at home and once prepared it could be stored for upto 6 months. Tandoori masala is used in almost all the recipes involving tandoor like tandoori chicken, tandoori paneer, tandoori mushroom etc.

Ingredients For Tandoori Masala Recipe

  • Cumin : 3 teaspoon
  • Fennel : 2 teaspoon
  • Coriander : 2 tablespoon
  • Fenugreek Seeds: 1 teaspoon 
  • Star Anise :  2
  • Small or Green Cardamom : 20
  • Big or Black Cardamom : 5
  • Cinnamon Sticks: 6 (1 inch pieces)
  • Cloves : 1 teaspoon
  • Black Pepper : 1 teaspoon
  • Mace (javitri) : 3
  • Nutmeg (jaifal) : 1
  • Physic Nut (ratanjot): 3
  • Dried Kashmiri Red Chili: 8
  • Dried Red Chili : 10
  • Garlic Powder : 2 teaspoon
  • Turmeric Powder : 1 teaspoon

Cooking Time : 15 minutes
Total Time : 20 minutes
 

How To Make Tandoori Masala or Tandoori Masala Recipe

  1. First, take heat a container (cauldron or kadai) with thick base on medium flame. When it's heated, put 3 teaspoon cumin seeds, 2 teaspoon fennel, 1 teaspoon black pepper, 1 teaspoon cloves, and 2 tablespoon coriander seeds. 
  2. Keep stirring and ensure that spices are not burnt. Fry till it starts giving fragrance and becomes crispy, it will take around 2 minutes. Once done, take out in a dish and leave it to cool down. 
  3. Now, heat the same container again, put 20 green cardamom, 5 black cardamom, 6 inch cinnamon, 2 star anise, 3 mace (javitri), 1 nutmeg (jaifal), 3 physic nut (ratanjot) in it. Before putting in container break the spices into small pieces.
  4. Keep stirring and ensure that spices are not burnt. Dry roast till it starts giving fragrance and becomes crispy, it will take around 2 minutes. Once done, take out in a dish and leave it to cool down.
  5. Now put the 8 dried kashmiri red chilies, 10 dried red chilies, dry roast till it turns crispy, it will take another 1-2 minutes. 
  6. Now put all the roasted spices into a big mixture jar and grind it, well. 
  7. Once done, take these spices out and put 1 teaspoon turmeric powder, 2 teaspoon garlic powder and 1 tea spoon fenugreek leaves, mix well. 
  8. Now again dry roast it for only 30 seconds, switch off the stove, let the spices cool. 
  9. Once the spices are cooled, put them in a big mixture jar and dry grind it in a fine powder. Filter this power using a sieve, grind the residue once again to make a fine paste. Tandoori Masala is now ready.
