Shahi Tukda Recipe
Shahi Tukda is a sweet dish prepared using bread slices and mawa. Shahi Tukda recipe is easy to follow and it takes very little time to prepare this Indian sweet dish. In some parts of Uttar Pradesh and Bihar this is also known as bread pua, pua is another sweet dish which is prepared using wheat flour. Besides bread that is fried in ghee and then dipped in sugar syrup (chasni), Shahi Tukda is served with rabri. Rabri is also a sweet dish prepared using milk. In this recipe we will be discussing both how to make shahi tukda and how to make rabri, as rabri is an essential part of shahi tukda.
Ingredients For Shahi Tukda Recipe
- Bread Slices: 4 (either white or brown)
- Ghee: For Frying Bread Slices
For Sugar Syrup:
- Sugar: 1 cup (100 grams approx)
- Water: 1/4 Cup
For Making Rabri:
- Milk: 1/2 litre
- Cardamom Powder: 1/2 teaspoon
- Saffron Threads: 4-5
- Cashew: 5-6 (finely chopped)
- Almonds: 5-6 (finely chopped)
- Raisin (kishmish): 5-6
Preparation Time: 10 minutes
Cooking Time: 30 minutes
Serves: 4 Persons
How To Make Shahi Tukda
For Making Rabri:
- We will use full fat milk and put it on stove in a container with thick base, milk could stick to base if we use thin base container.
- Wait for the milk to boil, as it starts boiling start stirring the milk. Cream will also come up, using the spoon that we are using for stirring, we will gently pick the cream accumulated on surface of milk and stick it to the side of the vessel.
- With continuous stirring we will cook the milk till the time it becomes thick and is reduced by half in quantity.
- Then add 1 tablespoon sugar, saffron threads (for color), cashew, almonds etc
- Now, gently scratch the cream that we had stuck on the container while cooking and put it in the milk this gives a different taste to rabri, and cook for a while. Rabri will be ready
For Making Sugar Syrup:
- For making sugar syrup put 1 cup sugar and half cup water in a container and put it on stove.
- Keep stirring till it gains a desired consistency. Consistency could be checked by touching the syrup with fingers if it sticks and one fine thread is visible as we take our fingers off the syrup, it's ready. I mean consistency should be such that it is neither too thin nor too thick. Better add 1-2 drops of lemon juice it will ensure that sugar does not crystallizes, but only a few drops.
For Making Shahi Tukda:
- Cut the borders or thick sides of the bread slices with knife, we will only be using the soft while portion of the bread. (Do not throw the sides that we have cut, it could be used in making bread crumbs that are required in several preparations).
- Put ghee in a container and heat it on a stove
- Once heated, deep fry the bread slices till it gains a brown color. When done take out the fried bread pieces on a plate, use napkins on the plate so that extra ghee is removed
- Now dip these fried bread pieces in the sugar syrup. Mix it well so that bread absorbs sugar syrup in adequate quantity.
- Put rabri over these bread pieces
- Garnish it will dry fruits of your choice, Shahi Tukda is ready to serve
