Dal Paratha Recipe | Dal Ka Paratha | Dal Stuffed Paratha Recipe

Chana (gram) Dal Stuffed Paratha is a very tasty and popular breakfast recipe. These dal parathas are more popular in Northern India especially Uttar Pradesh and Bihar. In several parts of UP and Bihar, chana dal paratha is the first dish that is offered to a new daughter in law, dal paratha is served with kheer. In several festivals too, chana dal paratha is offered to deities. There are two methods to prepare Chana Dal Paratha, it could either be prepared by boiling the chana dal (gram lentil) or by roasting it. PPersonally I prefer to cook chana dal paratha by roasting the dal, it tastes better.

Ingredients For Dal Paratha Recipe | Dal Stuffed Paratha Recipe

For Paratha Dough -

  • Wheat flour - 2 cup + 1/2 cup
  • Salt - 1/2 tsp or as per taste
  • Ghee - 1 tbsp
  • Water - for kneading the dough

For Stuffing -

  • Chana dal - 1 cup (soaked for 2 hours)
  • Turmeric - 1/4 tsp
  • Kashmiri red chili powder - 1/2 tsp
  • Garam Masala - 1/2 tsp
  • Cumin powder - 1/2 tsp
  • Ajwain - 1/2 tsp
  • Oil - 2 tablespoon + for baking parathas
  • Salt - as per taste or 1/2 tsp
  • Preparation time - 20 minutes
  • Cooking Time - 10 Minutes
  • Total Time - 30 Minutes
  • Serves - 2 - 4 (6-8 parathas)

How To Cook Dal Paratha 

  1. To prepare stuffing by roasting the chana dal first soak the chana dal in water for 2 hours. And after 2 hours filter the chana dal to remove water and keep it aside. And then we add wheat flour, salt in a big bowl and mix it well, and then add little water and knead the dough soft.
  2. For quick cooking, while we have kept our soaked chana dal, in the meantime we will prepare dough as it takes time to rest and in that time we could roast the dal. Take a big bowl, add wheat flour, then add salt and mix it well. Knead a soft dough using water. Once done, put ghee on the dough, cover it and keep it to rest for 20 minutes. 
  3. Now as dough rests, we will roast the dal and prepare stuffing, put a pan on the gas and heat it on medium flame. Then put oil in the hot pan and heat it, and add 1 tea spoon cumin and sauté it lightly, then add 3 to 4 dry red chilies and put soaked dal. Apart from this, add salt, cover it with a lid and turn the gas flame to medium.
  4. Remove the lid from time to time and stir the chana dal in between, and fry for 8 to 10 minutes. After 10 minutes, take out two or four chana dal from the pan and put it in a separate plate and mash it in your hands, if it gets mashed then the chana dal is roasted.  And if it could not be mashed, add 1/2 cup of water and cover the pan again and cook for 5 to 7 minutes more.
  5. After the water has dried, turn off the gas. Now take out the chana dal mixture in a bowl, and cool it completely. When the chana dal cools down, put it in a mixer jar. Make a coarse powder by grinding it. Water is not to be used in grinding chana dal. 
  6. As our dough has rested for 20 minutes, take the flour and mash it once again, mix it well and knead a little.
  7. Then divide the dough into 8 equal parts and make balls. Take one dough ball and wrap it in some parathan (dry flour). And roll it like a roti in a diameter of 5 inches .And place 2 tablespoon of the prepared dal stuffing in it's centre. 
  8. Now carefully using our palms we will seal the stuffing in the dough. Once done, roll the paratha gently after dusting it with dry flour. Roll it gently ensuring that it doesn't break and stuffing comes out. 
  9. Now put a tawa on the stove and turn on the gas on medium flame. Heat the tawa. And put the paratha on the hot tawa and cook it for a minute. When it is cooked from one side, then flip the paratha and once or twice turn the paratha from both the sides and bake the paratha well.
  10. When the paratha is baked well, apply ghee or oil and make it crispy. Once baked, put a napkin on a plate and take out the paratha, so that napkin absorbs additional oil. Dal paratha is now ready to be served.

Notes :- Things to keep in mind while preparing Dal Paratha Recipe | Dal Stuffed Paratha Recipe

  1. Instead of roasting the chana dal, you can cook it by it. Soak the chana dal properly to reduce the cooking time. You can increase or decrease the spiciness of the paratha as per your taste.
  2. If you are preparing chana dal stuffing by boiling, then once the chana dal is cooked, filter the water completely, otherwise there will be trouble in blending and stuffing.
  3. The stuffing mixture should be dry, do not add much water while cooking the dal.
