Pointed Gourd Recipe

Pointed Gourd Curry or dry Parwal Ki Sabji is a very popular preparations especially in the Indian weddings. Pointed gourd is a seasonal vegetable it is normally available in the market from October onwards and remains till entire season of winters. Besides being tasty, pointed gourd also has a rich nutritional value and cooking it is very easy and less time consuming. 

Ingredients For Pointed Gourd Fry Or Parwal Ki Sabji 

  • Pointed Gourd (Parwal) : 6-8
  • Potatoes : 3
  • Asafoetida : 1 pinch
  • Cumin Seeds : 1/2 teaspoon
  • Onion : 1 finely chopped
  • Tomatoes : 2 finely chopped
  • Green Chili : 3 (finely chopped)
  • Garlic : 5-7 gloves (finely chopped)
  • Ginger : 1 inch (crushed or finely chopped)
  • Coriander Powder : 1 teaspoon
  • Cumin Powder : 1/2 teaspoon
  • Red Chili Powder : 1/2 teaspoon
  • Garam Masala Powder : 1/2 teaspoon
  • Mustard Oil : 4-5 tablespoon
  • Mango Powder (aamchur powder) : 1 teaspoon
  • Salt : As per taste 
  • Coriander Leaves : 2 tablespoon (finely chopped)
Preparation Time : 10 minutes
Cooking Time : 30 minutes
Total Time : 40 minutes
Serves : 3-4 persons 

How To Make Pointed Gourd Fry or Parwal Ki Sabji

  1. First of all wash both pointed gourd (parwal) and potatoes properly, peel them, then cut into small pieces 
  2. Put a cauldron (kadai) on stove, pour oil and heat it
  3. Once the oil is heated put chopped pointed gourds in it and fry it till it turns reddish, when done, take it out and fry the potatoes in it till they turn brown and crispy, after the potatoes are fried remove them in a plate
  4. Add cumin seeds and a pinch of asafoetida (hing) in it and then add finely chopped onions in it and fry it the onions red, it takes around 3 minutes when done add salt, finely chopped ginger, garlic and green chilies and fry it for another 2 minutes
  5. When onions, ginger, garlic and green chilies are fried property add turmeric powder, red chili powder, coriander powder, cumin powder and fry it for from sometime.
  6. When the oil gets separated from the spices and the spices are fried well, add chopped tomatoes and fry it for 2-3 minutes till the tomatoes are fried and cooked 
For Pointed Gourd Curry 
  1. Add a cup of water in it and put the fried pointed gourd (parwal) and potatoes in it and mix well, let it boil and then switch off the flame. Garnish it with coriander leaves, pointed gourd curry is ready to be served 
For Dry Pointed Gourd 
  • Put fried pointed gourd (parwal) and potatoes in the gravy, mix it well and put a lid over the cauldron and cook it for 7-8 minutes on medium flame, when done garnish it with coriander leaves. Dry pointed gourd (parwal) is ready to be served
